John and I recently went on a Wild Yeast bread making course in the Forest of Dean.

We had a marvellous day and learnt so much about sour dough breads and wild yeasts.
The course started at 9am and finished at approx 5.30pm (with lots of drinks and lunch provided) and we left with a huge basket of the different breads that we had made - luckily Simon (who is passionate about wild yeast) told us how to freeze and defrost them for the best results!
We tried some of them out on our guests the next day and they really enjoyed them.

So we will be making sour dough breads from now on and want to start our own culture - which of course will have to be called Dean.
